it's probably going to be soup or rice, both the husband and i are sick, so no cooking and not much appetite.

Could you share the recipe.

We will continue to chow down on this delicious rotisserie chicken and I will start the stock today.

Tonight will be Chicken Tostadas with Black Beans and Cilantro-Lime Cream and some homemade salsa. Not sure what I will put in the salsa yet.

We usually go hear free live music at our Art Institute on Friday nights. They start early so we usually don't have dinner, just a couple glasses of wine while listening to the music. Then we have some snacks when we get home.

and corn. My sister and b-i-l and their newly adopted 10 year old dog are coming for the weekend, so I am busy getting some cooking done ahead of time. I hope our dogs get along, but they are all 10 years old and I "think" it will be okay.

5. A chicken casserole.

This is sort of combining two of my mother's recipes.

6 chicken thighs
herbed stuffing
broccoli florets
chicken stock
cream of chicken soup
cream of celery soup
cream
Shredded Swiss/Gruyere
Tarragon
Pepper

I put the stuffing and the broccoli in the bottom of a roasting pan and poured chicken stock over it, (please don't ask the amounts!) just enough to keep the stuffing hydrated. Added the chicken pieces and poured the mixed soups/cream/cheese over it. Added tarragon and pepper. It's in the oven at 325 for about 1 1/2 hours or until it's done.
