Related: About this forumI made 2 loaves and 2 muffins
from the same batch and zucchini bread recipe. I didn't get to taste anything, as I gave a loaf to my sister, a loaf to my friend, and a muffin each to my daughter and granddaughter. Everyone says it is good.
I told my other daughter I was using the recipe her husband hand wrote for me almost 30 years ago. I remember the first year or so they were married, he'd cook. He made them zucchini bread from the same recipe. She didn't remember that he did that. I sent her a picture of the recipe card and she is going to take a trip down memory lane with him

(22,767 posts)We didn't grow any zucchini this year, sadly. I used to make a chocolate zucchini cake that I also put dried figs into. Haven't had that in quite a while.
Now you've got me thinking about baking something since it won't be so hot here today.

My daughter is sending me a recipe for onion cheese zucchini bread-savory. I'm looking forward to trying that one

Makes 2 loaves
Heat oven to 325 degrees. Grease 2 8"x4" loaf pans. Optional: sprinkle the bottom with a little sugar.
In a large bowl, mix together:
2 cups shredded zucchini
1 cup vegetable oil
3 eggs
2 tsp vanilla
In another bowl, mix together:
3 cups flour
2 cups sugar
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
dash of nutmeg
dash of allspice
1/2 cup chopped walnuts
Add the dry ingredients to the wet ingredients and stir till blended. Fill each loaf pan about 2/3 full. Bake at 325, center rack for 1 to 1 1.4 hrs. Ready when knife comes out clean. Cool on racks.

(16,254 posts)I love the bread, but have never had a recipe I trusted. Zucchini and pumpkin breads are favorites in my family. I think my daughter was hinting.

(35,765 posts)If Marthe doesn't have the photograph of the recipe, you could go to pinterest and type in zucchini bread recipe.
For a handwritten one, add "handwritten," like how I found the above.
Now, I really must stop thinking about zucchini bread and get to work!

I"m going to make a very low carb blueberry almond flour zucchini bread for me. Which is why I didn't have any of the high-test stuff I made for give away Well, to be fair, I didn't sabotage anyone - my sister is recovering from spinal surgery, my friend doesn't need to worry about her weight, and my daughter and granddaughter eat healthy, which is why they got muffins lol
