What's for dinner where you are?

(4,074 posts)We have our office Holiday Party tonight. It's at a banquet facility. I'm a vegetarian so these things can be a little tough. The last one of these I went to the vegetarian dish, that we had given them advanced notice for, was vegetables on a plate. Baked, unseasoned, and no oil. Maybe a dozen vegetables spaced out around the plate. That was at a different place but I've had that happen too many times. I was at an IT conference out in Arizona and the first vegetarian meal that was served to me was spaghetti. No sauce, no oil, no seasoning.
So I may be having dinner rolls and beer for dinner tonight.

(31,170 posts)(and am leaning that way again) and I can totally relate. I have to say, that was a truly odd way to go about making a veggie meal. Especially assuming it was catered? Did they at least make it into a clock face or something?
It's really pretty easy to have a great vegetarian dish, and it's not all that uncommon anymore, so hopefully you'll have better options. But I could be happy with good beer and bread if I had to!

(4,074 posts)vegetarian meal. I had actually been there a couple times before that for brunch which had a ton of stuff I could eat.
It almost seemed deliberate. I know they have all sorts of stuff in their kitchen, anyone with even a modicum of cooking skills could throw something together pretty easily. Especially with several weeks notice.
I could make it through pretty well with good beer and bread.

We also had a Yankee swap with gifts furnished by the company and I ended up with a hard-anodized nonstick skillet set from Sur la table. Definitely a good night.

(6,581 posts)Not that it would hurt anyone in my house to drop a few pounds, even the dog.
Actually, I had some leftover meat from Sunday, barbecued chicken breast and a little bit of pork, so I shredded it up, mixed in some corn, beans, and peppers, added some herbs and spices, and turned it into a filling for an enchilada casserole. It will work. Just have to throw it in the oven when I get home, by the time I'm done tending the critters it'll be heated through, the cheese melted.
I could afford to miss a few meals myself. I'm super tired tonight, so an easy dinner sounds perfect to me.

(60,014 posts)We went out for lunch today to a really good local Cal-Mexican place....so when we have the big meal at lunch, we really lighten it up for dinner.
Thankfully it will be gone after tonight....four in a row is way too much!

(31,170 posts)I once read that Jennifer Anniston had the same turkey salad for lunch, almost every work day at the studio commissary while Friends was on the air. I don't know if thats true, and 10 years of the same lunch might be a bit much, but I cab have the same meal once a day for quite a while before I get tired of it. Well, I can if I LIKE it to begin with.

AS for dinner tomorrow night....well, you will just have to wait for tomorrow's thread (meaning i have no idea yet!)

I'm loaded down with homemade cookies & apple pie right now or I'd be making these much sooner. (My neighbor stopped by earlier)

Baking, baking, baking alongside. Got six more cookie varieties to finish by tomorrow.

(29,098 posts)Well, truth be told I had the Veggie Pho...SO had the huge bowl with all the cow tendon and tripe.
Anyway...I'm stuffed ...So I'll probably nuke a potato later and heat up some sauteed cabbage I made yesterday.
The CSA box and a Harry and David gift came today too...I need to eat some Fruit PRONTO!

(135,060 posts)because it's pureed, it's still pretty good. I love broccoli, asparagus and peas!!! Love them....I can make a soup with those ingredients day in and out or just eat them whole.

(31,170 posts)I make a veggie burrito filling with green peas, black eyed peas, pepperjack cheese, and a shot of cajun spice mix.
I ate that every day for a couple of years while I was in college. I never get tired of it.

(39,345 posts)Roasted carrots, green beans, purple onions. Lightly mixed with sunflower oil and S&P. Roast on 400 for about 40 minutes. Good stuff. SO had some pasta that was left over from last night to go with.

(31,170 posts)I just posted in today's thread that I am on my own tonight and hadn't decided, but I think I may follow your lead and roast veggies.
I've been hoarding my last few carrots for juice since I won't shop until later this weekend, but the idea of roasted carrots is firmly planted in my head now.

(31,170 posts)We do that often with a variety of dishes. I like putting the big effort one day, with a payoff of several great variations over the next few meals. I don't mind working hard, but I do like working smart!
The post roast for us often ends up in beef and green chili enchiladas, or BBQ sandwiches (or stuffed baked potatoes.) The very ends usually end up in hash for Bill, the man who loves all things potato, and fried.
