What's for Dinner, Mon., Oct. 25, 2021

Mushroom wild rice soup with miniature beef meatballs with chopped dill added to them.

I only had a taste of this last night when I made it because I didn't have the right kind of cream. The RG suggested mascarpone. I used half and half but it makes for a dull soup, so I'll add some mascapone tonight. In an attempt to jazz it up last night, I added brandy. That did help.

Cornbread with bacon bits and maple flavoring.

Tossed salad with blue cheese-yogurt dressing. Salad has cherry tomatoes, onion, pepper, and cucumber. I'm adding blue cheese crumbles and chia seeds. Also pepitas (pumpkin seeds).

Dessert will be a very small slice of apple walnut pie with chicory French roast coffee (no caffeine).

baked potato w/sour cream, butter and chives. Sliced tomatoes. For dessert, a lemonade popsicle.

Sort of like chow mein, no bok choy, no noodles. Ginger, black pepper, scallion, carrot, garlic.
