A chicken recipe I use after a gym workout

7 - 8 ounces chicken breast, cut into 1/2 inch cubes
1 can drained french cut green beans
1 can drained green peas
1 ounce jalapeno flavored cheese, shredded or cut into small bits
1/4 cup spring onion, mix of green tops and bulb
1/2 cup cheese crackers

Braise chicken cubes in a couple tbl spoons olive oil
add drained peas and beans, stir
add cheese, sprinkle on 3 - 4 grinds of pepper
stir, and let simmer

serve on bed of 1/4 cup cheese crackers

makes two reasonable servings w/ approx 10 gm fat, 41 gm protein, 23 gram carb - about 340 calories.

I added the cheese crackers for the 'crunch effect', but leaving them out will reduce the fat content a bit.

I'm lacking protein these days. Malabsorption issues. I've been eating a LOT Of chicken, good thing I like it

I'm going to try your recipe.

But I could sub for the peas with something like carrots, and use low carb nut crisps for the crackers.
