(11,637 posts)We bought some from Fred Meyers in WA State a few years back to make burgers with (my family loves it) and found it shrunk too much because of added fat--likely beef. Usually the meat is really lean. We discovered a few local ranches that sold their own raised grass-fed buffalo (bison) but have since moved to Hawaii where it is hard to find.
Advantages are that the meat is naturally raised outdoors with lots of pasture access and no added hormones or adulterated feed. The meat is really good and lean--"beefier than beef" as I heard one guest explain.

(1,965 posts)Once as a "Buffalo Burger",the other was spaghetti with buffalo meat sauce/balls. Neither tripped my trigger. They weren't horrible, but I've never ordered again.

(4,527 posts)I grew up eating it. It can be dry and tough if you don't know how to cook it. You have to add fat by larding whole steaks or roasts and by mixing it into ground meat. I'm not talking about olive oil or bacon grease, fat trimmed from beef is acceptable but kidney suet is preferable. Both are available from a butcher.
When it comes to low-fat/high protein content goat is the winner hands down. It also needs to be larded but it will cost you about 1/3 the price of buffalo/bison. Both types of meat can be tough, cooking under pressure solves this problem.

(12,132 posts)my daughter sometimes requests that for her birthday supper. We make them fairly thick and cook a little more than medium. I don't doctor them up with garlic and worcesterhire and other stuff like I do with regular 80/20 beef. A little salt and pepper and they are good to go. (And I don't HAVE to doctor up beef but I just like to.)

(928 posts)I've had Bison burgers which were really yummy and I've had a Bison rib-eye which was even better. Although the rib-eye left overs once cooled in fridge tasted a little gamey. Not totally unpleasant, but different. If having a steak it's best warm.

(70,295 posts)a neighborhood institution for 3 decades has been serving bison burgers and occasionally other dishes from the get go.
long time best vegetarian restaurant until it got to be a bigger thing in the last decade or so.
i have had the burgers a few times. they dont sell a cow burger.
it's good. not spectacular, but good. not that different.

Not too many bison in Europe anyway, so it is rarely offered where I live.
