holiday's to have a Spanish flair and therefore celebrate Hernan Cortes.

Not that I really can disrespect the splendid old timey style of Chris Columbus but I find the menu is a bit more eclectic with Cortes.

And what difference does Columbus' ethnicity make anyway? He was sailing FOR Spain. His ethnic background is irrelevant.

I guess that maybe the horse blood might be hard to source but the heavily-salted hard cheeses from non-standard milks (they travel well and can be imported) and the mutton not so much.

Though, it was the topic of one of my favorite travel articles ever:

The Mongolia Obsession: Falling in love with Mongolia. By Tim Wu
The Most Disgusting Food. Ever.
http://www.slate.com/articles/life/welltraveled/features/2008/the_mongolia_obsession/the_most_disgusting_food_ever.html

Warning: This article is potentially extremely stomach-churning. It's just also a really good piece of travel writing.
