I make killer vegan pancakes for the family most weekends.

Hasbrowns with scrambled tofu is another favorite in our house.

I make it twice a week and leave it in a bowl in the fridge. Well, different fruit salads...the same one would get tedious. I use what's in season. Shredded carrots make an interesting inclusion.

Add some soy or coconut yogurt when I eat it and sprinkle it with granola and toasted sliced almonds.

All five food groups...2 minutes or less...vegan. (I'm not a vegan...I'm a vegetarian: damned cheese.)

Of course, I make fancier and more complex breakfasts when I have time.

Peanut butter and banana sandwich (are you sensing a theme here? )

Sometimes if I've got a smidge more time I'll wrap some refried beans, salsa, and (vegan for you) cheese into a homemade burrito and nuke for a minute. Good to go.

Oatmeal (if I have enough time)

Every day without fail, cuz it's a nutritional powerhouse. I have a Food Saver, which allows me to cut up fruit in advance and vacuum seal it in the special containers. It lasts about a week in that state, and it compels you to eat healthy if it's the only thing in your fridge.

I also never get colds. Hmmmm....

I have no problem eating all plant foods the rest of the day. But mornings are tough. I have to be up really early and out the door by 5.

I did find a recipe for fast porridge using oatmeal and I'm going to put that in a bowl tonite with some soy milk and dried fruit. Then let it sit in the fridge. Will see if it is edible in the morning.

zap the oatmeal in the microwave in the morning, stir thoroughly, and then add the soy milk.

I eat oatmeal a variety of different ways, but never add any kind of milk. Lots of variations with fruit.

Or a TV or a computer (I use the one at the library).

I like oatmeal but the way I make it makes a real mess. It's hard to clean up afterward.

With quick porridge you are supposed to be able to soak the grains overnite and then you can just eat them raw in the morning. Sounds bad but people say it tastes really good. They put a wole variety of stuff in the oatmeal to make it taste even better.

I really like oatmeal this time of year but I only like pinhead oats, and they take 45 minutes to cook!

I make it ahead of time and pre-portion it into small to-go containers. It refrigerates fine, and you can add a little water if it's too set. Microwave at work!

I usually add flax seeds in the pot. Favorite add-ins are:
walnuts
pumpkin puree (pumpkin pie spice, too)
ripe blackberries (this is amazing)
peanut butter
banana
granola
vanilla soy milk

The making several days worth ahead of time would work for me.

Actually the poridge I made last night was really pretty good. I used gluten free rolled oats and added vanilla soy milk and the dry fruit. I added some more fruit juice that I had left over from my frozen berries yesterday. And added just a little pure maple syrup this morning. Not bad at all.

Now i need to see how long it lasts me this morning.

I was thinking that pineapple would be good with it. Get the pineapple in its own juice and add both the fruit and some of the juice.

started eating vegan. But I eat a lot each day. I just don't eat any junk food at all - all complex carbohydrates, fruit and veggies.

I really like potatoes jand brown rice so those are my staple foods. I steam everything - its faster.

I didn't really do this to lose weight - just to eat a healthy diet and this guilt free. But a nice side has been that I have losing wieght. And I feel a lot better - a lot more energy.
