1-cup sugar, I like to use 3/4 cup.
1/2 cup fresh lemon juice
1/4 cup butter cubed
1 - Tbls lemon zest
In a double boiler over medium heat whisk eggs, sugar and lemon juice until blended. Add butter and lemon zest; cook whisking constantly until mixture thickens and coats back of spoon. Transfer to small bowl, cool and refrigerate. Yum, good by the spoonful.

Not the Japanese Matsutake soup (which have never tried), but what my grandmother called velvet mushroom soup. The Matsutake grow locally in the forest and are called tanoak mushrooms.
Make in small batches for immediate consumption.
Chop the fresh (scrape and brush, never wash) mushrooms 1/2 inch or so (everything in recipe is or so). Use enough mushroom. Buttons are best and large. 4-5 large buttons. Chop shallots and garlic very fine. Soften butter. Add ingredients and cook very gently until soft, often stirring. Add 3-4 cups 1/2&1/2. Add 1/2 pup Christian Brothers dry sherry. Slowly bring to a boil, often stirring. Achieve a steady but not strong boil for 1-2 minutes. Enough soup for 4 soup bowls. Put in bowls and lightly sprinkle with paprika to cayenne for color. Odor is spicy on its own.
