The recipe is simplicity itself:
Beef tongue 3 parts,
Beef cheek 2 parts,
salt to taste
slow cook for 12 hours.
put a little bit of water at the bottom of the slow cooker.
Make a basket out of aluminum foil.
Place the meat & salt in the basket.
Let it cook for 12 hours.

Just salt? I don't know if I could do that. I always feel compelled to add pepper, garlic, chilis, onion... Arrgh

The secret to true barbacoa is the flavor of the meat.
You can alway season it when you put the meat on a taco,
Add lime juice, pico de gallo, or green tomatillo sauce as you wish. But the meat must be pure, with no seasoning except salt.
