(12,904 posts)On accounta my brother from Tulsa makes me make it all the time. I always cook it when I visit Tulsa, so we started calling it that.
I had seen it in a cookbook, but never really knew what it was called. Its basically hash, there are many variations.

I thought then that Gramma, growing up in a German heritage family and married to a Swiss immigrant, had learned to make a type of Germanic dish.
I find the whole question of what people eat and how they make it fascinating.

INGREDIENTS:
2 pounds russet potatoes, peeled
1 tablespoon all-purpose flour
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon dried oregano
1/4 teaspoon dried dill
Kosher salt and freshly ground black pepper, to taste
1 cup vegetable oil (only for frying, not needed if baking)
2 tablespoons chopped fresh parsley leaves
DIRECTIONS:
Place potatoes in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook until parboiled, about 6-7 minutes; drain well and let cool.
Using a box grater, finely shred potatoes. Using a clean dish towel or cheese cloth, drain potatoes completely, removing as much water as possible.
Transfer potatoes to a large bowl. Stir in flour, garlic powder, onion powder, oregano and dill; season with salt and pepper, to taste. The mixture should be workable but dry. Form potatoes into tots.
(if baking)
You may want to spritz with a little oil. Bake at 400, 20 minutes. Flip em. Bake for 20 more minutes until nicely browned.
(if frying)
Heat vegetable oil in a large stockpot or Dutch oven over medium heat.
Add tots to the skillet, 5 or 6 at a time, and cook until evenly golden and crispy, about 3-4 minutes. Transfer to a paper towel-lined plate.
Serve immediately, garnished with parsley, if desired.*

(63,221 posts)My favorite! I am a purist. Just milk and butter. I'm not into exotic ingredients.
And you need to rinse off as much starch as possible before and after cooking so they are light and fluffy and not "gluey". I could eat mashed potatoes every day. One of my all time favorite foods. So comforting.

(3,266 posts)With only salt, pepper, butter, milk. Leave em just a bit dry and stiff, so you can add a lot of gravy without getting too soupy.
I have to purposely make just a little when I make it, because I cannot stop with the mashed taters.
Mashed is my favorite, but I love a potato any damn way you can think of to fix it.

(9,580 posts)My Mother was a German war bride. She was a really good cook, but coming of age in war-torn Germany meant that sometimes her recipes were not as "lush" as they could have been.
German fried potatoes with onions, saurkraut, and fried brats - delicious and inexpensive. maybe creamed spinach on the side.

Best make at home fries you can buy in a bag, they are seasoned also, just don't overcook them.
Diced potatoes cooked in the oven with olive oil and a packet of French onion mix soup, the directions are on the box of packets, oh baby!
I won't eat a baked potato no matter what you throw on it.

(632 posts)I found this recipe long ago in a doctor's office, and it's become a mandatory part of every holiday meal in my family.
Slice potatoes into 1 centimeter widths (a little less than half an inch), and lay on a baking pan in a single layer. Then sprinkle with salt and paprika and tiny pats of butter, cover with wine, preferably white, but red wine works as well. Then bake at a high temperature until they look and taste done.

I especially like my scalloped ham and potatoes.

(25,855 posts)I love them. The skin as absolutely the best part, and alas, too many people only scoop out the center.
Also, for me the only way to eat a baked potato is with lots of butter, salt and pepper. I'm not a fan of all the extra crap, least of all the sour cream. Yuck. Well, maybe I'll consider REAL (not fake) bacon bits.
Actually, the very best way to eat the skin is to start by scooping out the interior potato, then buttering the skin and eating it. Oh, my.

(3,396 posts)I worked at a fast food place in the eighties where we made these. I like them so much I still make them occasionally. Its not the healthiest thing you can eat, otherwise Id make it more often.
Bake a potato, open it up and add generous amount of melted butter, top with salsa con queso (nacho cheese), then chili, then a diced up jalapeño pepper. My ultimate guilty pleasure, food-wise.

(16,377 posts)I mash the insides up with sour cream, salt/pepper, and chopped green onions. I put the mixture back into the hollowed-out skins, sprinkle with bacon bits and cheese and pop them under the broiler just long enough for the cheese to melt. Yummy.
I have the only child (now adult) who refuses to eat potatoes in any form, save potato chips. He won't even eat French fries. How can you not like potatoes? I don't get it.

INGREDIENTS
2 lbs. potatoes (5 to 6 medium), peeled and cut into 3/4-inch chunks
1 cup Hellmann's® or Best Foods® Real Mayonnaise
2 Tbsp. vinegar
1 1/2 tsp. salt
1 tsp. sugar
1/4 tsp. ground black pepper
1 cup thinly sliced celery
1/2 cup chopped onion

Thirty years ago next fall, that would have been my most favorite of all. No more.
Now, these days.....
1. Baked potato (**) doctored up with sour cream, butter and salt,
2. Mashed potatoes - hand whipped from scratch with butter and salt.
(**) Try this as a special treat: De-seed a jalapeño pepper and chop it up fine. Mix that in real well with the baked potato (to your taste) for a very special taste treat. I don't use even enough to feel any heat hardly at all, but just enough to sense that unique jalapeño flavor.
