I've had ones where the toaster is mechanically sensing temperature via two joined metal strips with different coefficients of heat expansion that cause their joined combination to bend one way or the other depending on the local temperature. With that type of toaster, you need to adjust the settings knob to "darker" before popping the toast back in if it's not dark enough, or else it will just pop right back up.
