Apple PIE... (Well with a gluten allergy)
So I went to Whole Foods, they have decent bread... nothing to write home about, but hey... it is either that or I bake it. One of these days I will be doing that anyway.

So they had Gluten Free Shells... I got a packet of two...

Folks if you need to make a gluten free pie... I just got it out of the oven and took a little piece of the shell, to taste it. Yes, it is far more crumbly than any other pastry, it goes with the gluten free part. But it has essentially good flavor. I cannot wait for the apple pie to cool down... we are having desert tonight!

I used Splenda (well the sugar\splenda baking mixture)... but it smells fantastic!

I haven't had pie in over a year, since we figured out what was at play here. And after three weeks of really bad tummy problems... this will be a treat.

1. Well I learned something interesting today
I baked and prepared per instruction... and yes it was VERY RUNNY. So I went to a baking board and learned to put it with the sugar and lemon in the fridge for a couple hours... before the rest of the process, to render some of the liquid out. Will try that next time

OTher wise the flavor is very good, and as usual I used MORE cinnamon than called.

2. I don't like the smell/taste of WF's gluten free pie shell, so I make
an apple brown betty instead, with a little quinoa to give it more body. Very very good, am making one today.

3. I don't miss pastry or bread at all, and the quinoa/corn pasta
works in dishes that call for pasta. I bread fish fillets with cornstarch with fair success, it does hold the fish together for the saute.

What I really need is bread crumbs.

I have the recipe for "wheat free bread for crumbs." I just need to grit my teeth and do it.

I'll let you know how it works out.

4. Recently found a very good GF bread
by a company called Udi's. It comes in the frozen food section, but you can defrost the
entire loaf- let it sit in the breadbox for a week or two, and no need to toast or warm it
before eating. IT"S SOFT! Yay!

Just had an egg salad sandwich for the first time in years. It was heavenly.
