Grated Raw Beet Salad
People who swear they hate beets love this salad. It’s a North African-inspired mixture of grated, uncooked beets dressed with orange and lemon juices and a small amount of olive oil.

2. I make a very similar salad
I add some finely shredded fennel to it. Use only orange in the dressing and serve it over spinach with some nuts and goat cheese. It's delicious.

3. Beet salad
I recently read that raw beets have the most nutrition. I wish I could try this but I do not have a food processor. I live alone and a big food processor is not for me. I love beets.

5. I'm sure this would work
using a mandolin, or even a box grater. That's what I plan on doing. Just a suggestion.

I made a shredded beet salad, but the beets are sauteed. Yummy too though.
