Okay, I got a sausage grinder.

Okay, I got a sausage grinder.
Other than making my own burgers from chuck roast so I can cook 'em as rare as I like, any good recipes for sausage?

Stuff like turkey, chicken, pork (shoulder) or brisket? Then there's always venison in the winter. Every now and then I can buy pork butt for .99 a pound and the same goes for brisket. 'Course in November turkeys are .39 a pound and I typically buy two or three. If I break them down and convert some of it to sausage the bones to stock they store pretty compactly.

I seem to recall a poultry and apple combo that looked interesting but have no idea where I saw it.

But Cabelas seems to have quite an assortment....

edit to add: I made burgers for the first time this weekend with some chuck I ground. They were SOOOO good!! I added onions, garlic and Worcestershire to them before I grilled them. Yum!!!!

4. There are a brazillion recipes for all sorts of sausages on the intertubes.
I make Italian sausage:

Pork butt has the perfect fat/lean ratio.
Salt and pepper
Fennel seed.

You could end right there. Or you could add some or lots more: garlic, herbs, wine, cheese, etc.

As I said, lots of recipes out there.

What do you have for stuffing the casings? This guy is cheap and VERY fast and effective. I have one and its a beast at getting the job done.
