Anyone making a special Valentines day Menu?
I wasn't feeling too well today so asked the SO to pick up a Rib Roast at the store. After coaching and encouraging him to consult with the butcher he just walked in the door and put everything away. I asked him how much he spent on the meat and replied "I don't even know". Now I'm a bit :scared: to go look in the fridge to see the 17 brazillion boned hunk of meat he brought home :scared:. Anywhoo.... I'm making

Meat with Bones
Baked Potatoes with the usual garnishes
Sauteed Mushrooms
Roasted Asparagus
Chocolate lava cake with Whipped Cream

Nothing particularly challenging but really a decadent treat for me. I have a nice bottle of wine what more can I want except someone to clean up.....

1. I asked my SO
what he wanted for a Valentine's dinner, and (I think in part because of Bill Clinton's recent episode hitting too close to home for my guy with two stents), he said, "tofu." So, I'm picking up the really great extra firm tofu from the local Asian shop, and marinating that, to make thai-seared tofu spring rolls. That, with some fresh green beans, asparagus (we tend to go for multiple veggies around here), and lots of red wine, and something rich, with dark chocolate for dessert.

...a good hunk o' beef sounds pretty wonderful, though... mmmmmmmmmmmmmmmm... :loveya:

2. OH, that sounds sooo good!
We may be able to get some fresh oysters later today, and I am going to eat them raw and then make some oysters rockefeller.

Oysters for valentines day is my favorite!

3. I love Oysters
The SO doesn't eat of the sea much. He likes deep sea scallops, calamari, octopus and an occasional fried fish and chips. I love it all and it's usually what I order when we go out.

... with spinach and Italian sausage. I just finished layering it all together. I can go in the oven in about half an hour.

5. Planned on 17 for lunch with cooking duties split...
between my sister and me. Weather forced one family to cancel, then my sister and her daughter got strep, my aunt and uncle decided to leave before more bad weather and... and... and... we ended up going out for breakfast as a group instead. :)

Now I feel like take-out pizza.

My sister was to bring a fabulous dessert but since that's off I'm whipping up some cupcakes for my boys and calling it a day.

I haven't made the cake yet.... We ate a "Lunner" and I'm just stuffed and a little tipsy. SO didn't care for the Montepulciano I opened....Oh wellllllll. Everything else was wonderful especially the baked potato. I haven't had a baked potato in over two years... I'm gonna pay for this tomorrow....but right now...Meh.......And Lily and Izzy are really enjoying their bones.

7. We had baked salmon and a spinach pasta dish
Coho salmon fillet with lemon juice, garlic, olive oil, vinegar, basil, salt & pepper, marinated for a bit and then baked in the marinade.

Whole wheat penne pasta with drained frozen spinach, onion, garlic, sour cream, garlic, parmesan, and an egg. Baked with the salmon.

Simple and amazingly good. It was ahrd to come up with something easy for Mr. csziggy to eat since he's still recovering from bone grafts in his jaw.

8. That sounds really really good
I especially like the idea of the pasta and sour cream with the spinach....Yum....I'm gonna have to try that. I hope the Mr. feels better soon....ouch!

9. Here is the pasta recipe as it was originally

I forgot to get monterey jack so I just added more parmesan than called for. I had some low fat sour cream instead of the regular, two cloves of minced fresh garlic, and a chopped medium onion instead of the french fried onions. Oh - penne pasta instead of spaghetti. I have no idea of amounts - I just put in what looked right.

Mr. csziggy is getting better. If he'd rest more and talk less it wouldn't hurt so much. And I think he tried eating solid food too soon, so the healing is slower than it should have been. But he is improving and is back at work.
