Finally managed the hand rolled croissants!

After many tries and failures.... with some great advice from my old pastry teacher (Jeff Yankelow, who leaves tomorrow for the Coup du Monde de Boulangerie!!)

This week- I bought a sheeter on eBay. We drive up to MN this weekend to fetch it. :bounce: :bounce: :bounce:

Just so you know- we are in the process of rehabbing a 100+ year old building in our historic downtown to open an artisna bakery/cafe. So the sheeter ain't just for fun out back (we currently do all our baking in a converted shed).

Life is good! (until I read GD...)

I was really wanting a rondo but they are big bucks, even on eBay. This was the first moline reversible I had ever seen.... but at the price we paid I think it could undergo a total rebuild and still be wirth it. Gotta love eBay!

Our other recent purchases include a 4 deck Chandley steam injected stone hearth oven (8' long- zounds!) and a 100 quart rondo spiral mixer. Both are 3-phase so we haven't had a chance to use them yet.

The spiral mixer was billed as 60 quart- imagine our surprise when we recieved it (from Arizona) and saw a bowl large enough to bathe in! I think for the volume we'll be doing it will work just fine.

This is the space we're working on for a bakery, hope to open June-July-ish.

3. i started my biz from ebay too, got a 12' expresso cart, machine, grinder
refer and cash register for $10K

i got a used Vitamix on ebay and I was in biz :)

I still am "on the cart" every day and the old refer and vitamix are going strong 3 years later. I replaced the espresso machine for a fully auto job (made training less of an issue) and still got $2000 for the used one off ebay last month :bounce:

such exciting news Willie, have a blast! and don't expect any free time for a while :hug:
