Any interesting food plans for the 4th?
I am keeping it simple. Early dinner of steak on the grill, homemade bread with Irish butter, salad and homemade peach ice cream for dessert (yes, I have a bunch of those SC beauties). After that we go out to meet friends and watch fireworks.

1. Bison t-bone steak
with potatoes and green beans from our garden. Homemade pink grapefruit granita.

We're going out for mussels and salad at Carabbas on Sunday for our 12th wedding anniversary.

A family in our coop raises them. It's really delicious and lower in cholesterol than beef. We love the ground bison for meatloaf. :9

Your menu sounds delicious, too. And I agree, simple is best when there's lots going on. Have fun! :hi:

8. That sounds soooo good.
I like bison but can only get the 1-lb. boutique packages of ground meat around here. Happy 12th Anniversary! Have fun!

17. Bison! I wish we could find more than ground bison here. It has been YEARS since I had a bison steak
Leaner and drier but beefier than beef.

I marinated it all day in a little soy sauce, worcestershire, and balsamic vinegar with kosher salt, coarsely ground pepper, and minced garlic. Threw a couple of butter pats in the cast iron skillet and cooked it to medium rare. It was awesome. So tender and juicy it practically melted in our mouths.

This is our local producer. The website says they don't ship, though. :(

25. Morning, ellen!
We had a very nice day. After I made peach and strawberry preserves and we had dinner, ended it by relaxing and watching some of Carl Sagan's Cosmos on hulu.com while the ice cream was churning. I just had some more grapefruit granita. So refreshing!

The trip to Carabbas for mussels is a rare excursion for us. We love them, but we try not to eat seafood on a regular basis at all.

I hope you had a great day, too. Your dinner sounded very good! :9

4. Going to my brother's for a cook out
I'm in charge of pies. The mixed berry and the peach pie are cooling. I have an apple pie in the oven now. :-)

5. Probably not. I'm trying to lose weight, so I dare not fix the batch of potato
salad I have a craving for, lol.

I did pick up a package of hot dogs with a FREE coupon, lol. My annual hot dog frenzy. Whole wheat buns and mustard and relish to go with.

Have you tried the Hebrew National 99% fat free dogs? They are only 50 calories each and really pretty tasty when you gotta have a dog. I really like them....They're pricey but I've seen them go on sale every once in a while then I stock up. They keep a long time in the freezer.

7. Making a picnic for Mr. Pup's unlucky office group that has to work this

All five of them were very grateful, especially the two vegetarians because of the salads and deviled eggs (I added an Asian cole slaw). They are no longer earning overtime for these grueling weekend work slogs, but the bonus is that they continue to draw salaries whether there is work in the studio or not. Hopefully, that will turn around for everyone soon. I visited Oklahoma in early June. Such nice people and such crazy politics. If I didn't grow up there I couldn't begin to understand the mindset. You take care, girl! Sellin' frash aigs yet? :hug:

The heat has been horrendous for the most part. The chicks ain't layin too many frash aigs at the moment! I do always think of that term when I think about eggs, tho. I spell it that way in my head. LOL

29. For some reason I thought you were based nearer to Ft. Sill or I would have
invited you for a meet up. I was in Osage County, Tulsa, and the capitol of the Cherokee Nation in Tahlequah. I filed for my tribal membership which is something I've been wanting to do my whole life. Honestly, that old lady's sign has corrupted me for thinking of fresh eggs, too. Kinda like an ear-worm, eh? Frash aigs, frash aigs 4 sell. :hug:

So, I take it your tribal affiliation is Cherokee? Are you official now or still waiting on an application process?

31. I'm waiting on my card now.
I could have gotten it on the spot except that my birth certificate has been in the file for such a long time that the seal has been pressed flat. They gave me the address & so I picked up a new certified birth certificate and a death certificate for my dad and sent them in the day I returned to NY. I'd done all the work before hand so the process is over except for me receiving the card. I visited a friend who now lives in a Bixby nursing home when I was there, so I probably wasn't too far from you. Same goes for you if you ever get back east. Let me know and we'll do something special. :hi:

18. Small block party tomorrow, and...
no one knows who will bring what, or even exactly where it will be, so picked up a pile of taco shells and am making taco fillings.

I see a pineapple lurking in the kitchen, so it's pineapple upside down cake for dessert.

I might find a head of cabbage tonorrow, and if I do I'll make pineapple or mango cole slaw.

21. I had a single (I'm watching my weight) hot dog on a whole wheat bun
with brown mustard and pickle relish, and some brown basmati rice salad with peas and a tangy yogurt-y dressing. And a glass of white zin. I decided not to brave the crowds at Warner Park - feeling a little under the weather.......

Tomorrow I'm gonna hit the farmer's market for tomatoes and will make Stuffed Tomatoes Provencal.

24. SIL made some lovely Copper River salmon with a little balsamic vinaigrette
Mixed veggies, potatoes, and lemon layer cake. I just helped wash the dishes--no cooking at all!

27. We had the Salmon too
It's silly not to buy it right now. I got a huge fillet at Safeway for about 11 bucks. It fed the three of us and I had left overs to throw in a salad today.

I did it with a balsamic glaze and a huge green salad with cherry tomatoes. SO ate three ears of white corn...I had no bad carbs but did indulge in a weight watchers Ice Cream Bar :wow:
