back to the farmers market conversation....
I think I've finally figured out what to sell at farmers market. I found a fabulous book of quick pickle recipes. I think that's going to be the thing! I will have tubs of 6 or 8 kinds of pickles and ladle them out into white waterproof cartons similar to chinese to-go cartons. (with a cute label affixed, of course)

Here are some of the recipes that sound very intriguing:

Bourbon apricot pickles
Balsamic grapefruit segments with shaved fennel
Citrus turnip wafers with gin and juniper berries (is this berry season, maybe not)
Smoky pickled corn circles with coriander
Pickled grapes and jicama with celery seed
Crunchy orange pickled red onions with chipotles and tequila
Sweet and hot curried zucchini

Lots, lots more

Gotta get testing.

1. I love pickles! Sounds like a great idea!
How long do you figure they would last in the refrigerator? I've only bought pickles in a jar!

2. these are quick pickles...
...meaning that they aren't processed in boiling water, sterile sealed etc. I have yet to read these specific recipes, but many quick pickles take a few days to reach flavor and are then good in the fridge for a week or two. That's a generalization, though. Our current plan is to prepare on Tuesdays and Wednesdays for the Sunday mornings market.

Everything on your list sounds mouth-wateringly good. Where do you get juniper berries?
As much as my family likes pickles, they don't last long around here. I make bread & butter pickles (the canned kind)and they get gone in a hurry.

Keep us posted on your progress, and if you have any recipes to share, that would be great.

6. The pickle vendor at our farmer's market is back for year 4
and her business increases year by year. We buy fresh pickles, sweet pickles, sour pickles, hot pickles, spiced pickles, bread and butter pickles, and chow-chow from her all summer long. They're so good that I substitute them in raitas, potato salads and especially tartar sauces. She does not have the wide variety of exotics that you are mentioning, but I wish you the best in carving out a niche for yourself. With those products you will undoubtedly do it. Good luck!
