Here's our entry to the crepe theme event!





Mr. Tesha asked for "Crepes St. Jacques" (Coquille
St. Jacques), crepes with a scallop and beschemel
filling.

So today, after doing some work on completing our
kitchen renovation, we set to it. Per Julia Child's
instruction, I had made the crepe batter earlier in
day and it was cooling in the 'fridge. We tried
several different methods of making the crepes,
varying in comedic effect. Funnily enough, on the
very last crepe, we finally got it really right. ;)

Meanwhile, we started the filling. It starts with
some green onions and herbs simmered in wine, and
then quickly cooks the scallops and mushrooms in
that mix. Separately, we made the beschemel (with
Swiss as the cheese but one egg yolk short, whoops!).
Once that went along a ways, the scallop cooking
liquid, milk and cream went in is as well.

Then, the assembly: in a slightly oiled pan, we
set a crepe, loaded it with the scallop-and-mushroom
filling, added the beschemel, and folded it up.
Six crepes later, the rest of the beschemel went on
top with more Swiss cheese. A couple of minutes
under the broiler and the result was pretty darned
good!

The reject crepes went into desert: Nutella for
me and Nutella topped with Frangelico for Mr. T.

And you know what? I think we'll do all that again!
(But maybe with less-comical crepes next time. ;) )

3. Yummy! Great job.
Crepes are an acquired skill, I think. I remember my first experience. We ate a lot of "mistakes" before we got them right. I will be posting my recipe later tonight.

thanks Lucinda... we love these plates, we found some on sale at a kitchen store going out of business a few years ago and filled in the set when Mikasa had a great sale and a free shipping promotion shortly thereafter. Luck... pure luck -

7. Can we come over for dinner?
That's very similar to what we were (are) going to do. But with crab meat. And crab cake type seasonings.

The over the top killer is your Nutella desserts. I am truly jealous. I have a jar of Nutella hidden in the back of the upper cabinet. Don't tell Sparkly or my cardiologist.

doing the research for crepes we found so many other great fillings for these little packages. We'll be having these again. Yum!

12. Like you, I would probably never have tried crepes if it hadn't been for this challenge.
I found several other recipes for crepes that I want to try that I'm sure I'll do it again. I'm ready for the next challenge now.
