| Leftovers - BBQ chicken / black eyed pea soup. |

Left over BBQ chicken
chicken stock
celery sweet onion carrot potato
black eyed peas
sage black pepper
******************************** In a large stock/soup pot:
Break up BBQ chicken and cover with 1/2 stock and 1/2 water. Start to simmer.
Add 1 tsp sage. Add 1 tsp black pepper.
When simmering,
Add 1/4 cup celery tops. Add 1/4 cup quartered onion.
When meat falls off the bones,
Add 1 cup black eyed peas. Add 1 stalk celery stalk, 1/2" chunks. Add 2-3 carrots, 1/2" chunks. Add 1" slice onion, quartered.
after 15 minutes, fish out what bones you can get.
Add 2 potatoes, quartered. Add hot water as needed.
Simmer till all is done.

Serve with side of green salad, warmed corn bread w/honey.
