Black-eyed Peas - Part Two.

Well, I found 'em, I cooked 'em, I'm eatin' 'em. I cooked the peas with Ozark Mountain smokehouse peppered bacon, onions, and veggie stock, plus a bit of thyme, S&P.

Served with greens; chard that is, cooked in vinegar, onions, and a splash of hot sauce.

Not bad at all. Quite a change of pace, and perhaps a new tradition. :D

1. I don't eat them but
I did cook them for the DH. Put them (canned variety, well rinsed) in a skillet with butter and olive oil. Seasoned with salt, pepper, and garlic. Let them simmer for quite awhile and them flipped them. (This method was from a friend of mine.) He ate the whole can. Served them with some fresh collard greens cooked in olive oil with lemon juice, cider vinegar, salt, pepper, and just a pinch of sugar.

Love that OMSH Bacon. We lived a quarter mile down the road from their Farmington Arkansas store when I went to College. God, that stuff is good. Just placed an order a week ago. We get Glory Foods Blackeye Peas; nicely seasoned. They have a nice line of greens, beans, etc...
