I hate lamb with a passion, so here is a recipe we use to make gyros using either chicken tenders or turkey tenders:
First you need to make the seasoning mix which can be stored in an old spice jar.
1.5 tsp dried oregano, 1 tsp dried mint (1 mint teabag), 1 tsp dried thyme, 0.5 tsp dried basil, 0.5 tsp dried marjoram, 0.5 tsp dried minced onion, 0.25 tsp dried minced garlic.
Mix up and store in jar in a cool,dry place.

Cut up half pound chicken or turkey tenders and sautee in olive or canola oil until brown, about 5-7 minutes. A nonstick pan is best for this. Turn off the heat and sprinkle with the Greek seasoning mix until the meat is coated and fragrant (or to taste).
Serve in warm pita bread with onion, cucumbers, tomato, or whatever you like. You can mix up some garlic, dill weed, and finely chopped cucumber in light sour cream and use as a sauce for the gyros.
