Anyone have a good tuna-macaroni and cheese casserole recipe?
I got a couple boxes of macroni and cheese and couple cans of tuna in the attempt of making a meal that can be spread out over a few days. One recipe I saw has tuna, the mac and cheese, milk, and cream of mushroom baking in a casserole dish. Has anyone tried that? Any good? Anyone know of better recipes?

for the simplest tuna mac, just make the mac and cheese per instructions and dump drained tuna in at the end, heat through

for real tuna mac casserole, you need real cheese.

here is the general procedure, measurements depend on how much you want to make and are very flexible

bring a honking pot of water to boil - toss in a chopped onion to save baking time (important in summer, ugh) some chopped celery too (or just use tops and fish them out later, or a touch of celery salt in the sauce, below)). cook pasta (any kind - noodles are fastest, but you can use anything)

when al dente, drain into a colander - leave colander full in sink

in same pot make a thin or med white sauce (butter and flour + milk), add tuna (no need to drain too thoroughly with med thick sauce - adds flavor) then add pasta and onion/celery. mix well salt and pepper to taste

------or------

use cream of soups (mushroom, celery, chicken, or some combo) instead of white sauce

dump into a casserole dish cover with grated cheese (med cheddar) and crunched potato chips (optional)

bake until hot/cheese is melted and bubbly

:9

must be served with green peas:rofl:

2. I wish I had the stuff to do the real thing
will probably end up doing the cream of mushroom, but I do need to get some cheese to shred on top and perhaps something crunchy. :9

10. Use fresh bread crumbs, drizzled butter and a dash of Paprika
also sliced water chestnuts, then slivered almonds, then fresh bread crumbs with drizzled butter makes for a nice crunchy topping. The paprika (sprinkled on top) browns nicely and adds a dramatic and tasty touch to any topping.

15. OMG, you're right!
I hate that stuff. My mother served it all the time, and she was one of the worst cooks I have ever known.

I don't care what the recipe is or how good the chef. I will not touch it.

I have a friend who feels that way about meatloaf. His mother was a terrible cook, too. She burned everything. Her meatloaf was one of her most inedible dishes.

5. This time of year I would just cook the pasta, dump in the tuna, sprinkle shredded
cheese on top and stir

If it wasn't quite hot enough for me, I'd microwave for a minute or two

Who needs the oven on? It's too hot

you drain the tuna before you mix it in with the pasta?

13. You drain the pasta, of course. If you're gonna microwave, you'll need a touch of liquid
and the tuna juice is more flavorful than the pasta water. And if you drain the pasta well while it's still hot, it's gonna dry some as the steam leaves it. So I generally don't drain the tuna myself, but I can be one lazy mofo. Sometimes I'll dump some frozen stirfry veggies or frozen broccoli atop and microwave until the veggies have just started to cook but are still sorta crunchy

7. I do what you're doing often
But it's just me eating, so I really don't follow a recipe or anything. It rarely makes it into the oven either. I make the mac&cheese and add stuff I have laying around like mixed veggies, hotdogs, leftover meats.

I used to add fried Treet meat. I stopped doing that when I realized I was getting like 150% of my salt intake from one sitting :P

My best found tuna casserole-type recipe goes something like this...

- Bag of egg noodles
- 2 cans of tuna
- if I have it, velveeta or some cheap process cheese, if I don't ANY kinda cheese that'll melt
- sometimes, some veggies either a can or I keep frozen mix vegetables for stuff like this
- 1 can cream of mushroom soup
- bread crumbs from old bread I keep in freezer
- butter
- spices I like.. garlic powder, cumin.. etc.

I cook the noodles 'til they are just about done (if using frozen vegetables I add to water 5 min before just about done)

Drain, add cheese, cream of shroom, can of vegetables if I went that route, tuna, and spices

In a measuring cup I put crumbs and enough butter to sog up the crumbs and pop in microwave 10-30 secs

Pour the gob of noodle stuff into baking dishes. Seems like it'll fill 2 big'ns

Cover each best you can with bread crumb mixture

Bake in preheated 375 oven for like 10-20 minutes or until bread stuff looks yummy and brown.

Good eats! It is even great cold. For some reason it likes salt added :9

9. prepare Mac n Cheese and leave out the tuna
I can't be in the same house when that crap (canned tuna) is being prepared. The smell makes me gag. That and mustard in a recipe, if its baked or fried. Yuck. IMOHO. As long as you're at least 3 states away go for it. But don't tell me about it.
