Got any corned beef and cabbage recipes?
I'm starting a tradition for grandson since I remember my Polish grandmother doing some cabbage thing on New Years. It was probably Glumpkies(sp) but I got some Irish in me from mom's side and figured wth :D

PS: I am really just making excuses not to start.

1. Here's how you start. Buy a corned beef. Buy a head of cabbage.
If the corned beef was packaged in plastic, take it out and throw away those nasty "juices" because they're mostly salt. Keep the stuck on spices-- they're good flavor for the pot.

Hope you have some carrots, onions and potatoes too.

Now find a recipe, or use this one as a guide.

I differ with the author on the timing for the cabbage. I'd let the beef and other vegetables simmer for a full three hours or more but in my family the quartered cabbage goes into the pot no more than 1/2 hour before the end -- if it's not a giant cabbage it may cook in as little as 15 minutes. Do cook the potatoes in a separate pan because it's easier to keep them intact --cooked in the pot with the beef for too long and they'll disintegrate. What my mother used to do was cook the potatoes until firm but done, drain the liquid and then add some broth from the beef pot and give them a toss. That way they pick up a bit of the flavor.

6. Our recipe is a lot like that, but we slow cook the cabbage, veggies and meat in beer first.
Mmmmm. Slow cooked meat in beer!

7. Beer should be used more often with stews.
Cooking the cabbage for less time makes it less velvety but cleaner-flavored IMHO.
