2. Don't have the exact recipe offhand
My husband has it committed to memory.

Basically, you brown a chopped onion with a stick of butter; add ground ham and a bit of garlic and cook a bit more; add some flour to the pan; cook a bit more; add a large can of sauerkraut, ground; and a bit of the juice from the can; and cook until the mixture is thick an stiff. Chill. Make little balls from the mixture. Roll in flour, dip in milk beaten with eggs, roll in fresh bread crumbs, deep fry.

Or do you just eat as is? "As is" sounds pretty tasty.

6. Very traditional in these parts
The sauerkraut-ball zone extends into western PA and the northern WV panhandle. There are sausage versions, ham versions, corned-beef versions and combo versions. We're ham purists.

I'll have to try and find a place that makes the other ones. One place I had them at served them with a warm horseradish sauce to dip them in :9

Once Mom and I left Bawlmer, people always used to think we were weird 'cause we served plain ol' sauerkraut with our holiday meals. But deep-fried kraut balls?! :wow:

One question: What about all those poor sauerkraut men? :P
