Hi everyone! What's for dinner tonight?
:hi: It's been a few days, but here I am.

What's for dinner?

I'm making Linguine Carbonara, a la Pioneer Woman :

* 1lb linguine pasta
* 4 eggs
* 1 pound bacon or pancetta
* 1 1/2 cups Parmesan cheese
* 8-12 cloves of garlic
* 1 large onion
* 1 cup chicken stock
* 1 cup white wine (or substitute another cup of stock)
* 1/2 stick of butter
* 1 handful of parsley
* 1-2 tablespoons black pepper

Me <------loves eggplant parm, esp. when I don't have to cook it from scratch. Salting and draining the water from the eggplant slices kills me.

27. Cool, i really like their stuff, the mac and cheese is also good, i mix salsa into it.
i put salsa in and on a lot of things.

29. Well, I'll keep my little fingers crossed, then.
We're making a pre-Thanksgiving dinner this Saturday specifically so that we'll have leftover turkey (the real Thanksgiving is at his sister's place in Merced).

17. Fried chicken, garlic mashed spuds, AND baked green beans almondine:
Put the green beans on a piece of aluminum foil.
Dot with butter, sprinkle with a little sugar and slivered almonds.
Fold into a packet, seal the edges, and bake in a 350 oven for 15 minutes.
Really intensifies the flavor.
You can also do this on the grill.

Basically, you mix the raw eggs with the parmesan and parsley, and then very quickly cover the mixture with hot hot hot pasta (just drained), and mix thoroughly. The hot pasta cooks the eggs as you stir. Oh, and that's when you add the butter too.

It is sooooo good.

60. My mom used to make "egg noodles and soy sauce". Quick and cheap for a family with four kids.
It was egg noodles with raw egg cooked on and splashed with soy sauce.

The the egg in the recipe you posted made me think of it.


I think i may make the pasta carbonara tomorrow. Thanks for the recipe. It looks so damned good.

34. It's Whole Foods Pizza Night! $8.99 gets you a huge, freshly made brick oven pizza
on Wednesdays, at least at the WF by my office. It rocks and it's so cheap! I usually order extra toppings but it still only comes to $11 bucks. Can't beat it.

47. Make something similar, but w/out the bacon.
Tonight we are having spaghetti squash with: Italian parsley, tomatoes, green onions, Parmesan cheese, garlic and oregano, olive oil and lemon juice. Served with salad: mixed greens, artichoke hearts, avocado, green onions, kalamata olives, tomatoes, feta cheese and pumpkin seeds with a greek vinaigrette dressing. To drink! Pomegranate juice with soda. Safeway has started carrying this terrific pomegranate juice from Italy, but it is so concentrated we cut it with soda water.

Did you know you could roast any squash seeds just like pumpkin seeds? There aren’t as many but they are just as good.

59. Bratwurst, baked beans, and Maine-style coleslaw.
Thawed leftover homemade beans at that, so it's an easy prep. For those who don't know what Maine-style coleslaw is,it's half of a large head of cabbage, shredded, coated with this dressing:

1/2 c cider vinegar
1 tbls butter

Put in pan and bring to a boil. Remove from heat and add:

1/4 c sugar
1/2 teas dry mustard
1/2 teas celery seed
1/4 teas mild paprika
Salt and pepper to taste

Let cool to room temp before tossing with the cabbage.

Sourdough bread dipped in olive oil with minced garlic in it.
And a frosty non-alcoholic O'Doul's beer.

My DH had more of last night's baked ziti, but I wasn't very hungry.

64. Went to Macaroni Grill for the first time.
I'm currently out by the Albany airport, so my options are limited. Had lobster ravioli. Wasn't bad.

There's an Olive Garden right across the street that most of us refused to step into so I actually had the chance to tell some DU history to the group. The New Yorkers thought the story was hilarious.
