Hey DU - what did you have/are you having for dinner tonight?
I've got a bolognese-style sauce simmering on the stove, and just put the pasta on the stove. It's smelling very good in my house right now. :9 A parmesan-garlic baguette from Trader Joe's will round out the meal.

What are you eating?

1. Chicken adobo, sticky rice, pancit and broccoli leftover from the Academy Awards dinner.

Totino's Crispy Crust Party Pizza (sausage and pepperoni). And when I am done eating I am taking a nap... I had a shitty day and sleep sounds nice.

I made fresh tomato pasta with my new Pasta Machine toy and since I had fresh parsley and basil, I topped it with ...

PASTA PUTTANESCA

1/8-1/4 cup pancetta, finely diced
3 tablespoons olive oil
5-8 cloves garlic, peeled and minced
1 large can (approx 35oz) whole peeled Italian tomatoes
1 dozen oil-cured black olives, pitted and chopped
3 anchovies, finely mashed (optional)
2 tabelspoons red wine vinegar
a pinch red hot pepper flakes
2 tablespoons each fresh basil and oregano
1/4 cup chopped fresh parsley (save a little for sprinkling)
1 bay leaf
Romano or Parmesan cheese (for sprinkling)
1 lb pasta, cooked according to package directions
salt and pepper, to taste

Note: If you don't have fresh herbs available, substitute 1/2 teaspoon each dry oregano and basil.

In a large skillet, sauté pancetta over low heat in olive oil until soft and translucent; bring heat up and allow to pancetta to brown slightly on edges.

Add garlic, oregano, basil, red pepper flakes, parsley and olives. Mash the anchovies well into the oil, using the tines of a fork. Tip: You can do this with the garlic after it's cooked, too, if you want to avoid having to mince them - just leave the cloves whole and mash them into the oil when they take on a little light coloring. Be careful not to let garlic brown or the oil with be bitter.

When garlic begins to take on the slightest color and herbs permeate the air, add the can of whole tomatoes (including the juice in the can). Submerge the bay leaf in the sauce.

Simmer over medium-low heat, with just the occasional lazy bubble surfacing for 20 minutes or so, until the sauce begins to thicken slightly. Stir in wine vinegar during final 10-15 minutes of cooking. Taste and adjust seasonings.

Meanwhile, as sauce simmers, bring a large pot of water to a boil and cook pasta according to package directions and drain.

In a large bowl, combine pasta with enough sauce to coat. Add a little of the pasta cooking water if sauce is too thick, or a teaspoon of olive oil. Sprinkle pasta with a little fresh parsley and cheese before serving. (Remove bay leaf before serving).

Note: Always use a good quality wine vinegar, and don't substitute white or cider vinegar, although good balsamic vinegar or a full bodied red wine can be used for variation.

Chopped pork or salt pork may be substituted for pancetta, but with different (but still good) results.

For the first time I used shredded chicken I had cooked in the slow cooker in a bottle of beer. Wow that was good.

34. We had boneless chops last night
First, I cut up potatoes, onions, and carrots into 1-1/2 inch cubes... enough to cover the bottom of a casserole dish. Season with Lipton Onion Soup Mix and pepper. Then add chicken broth... not quite enough to cover the veggies. Dip the pork chops in egg and seasoned breadcrumbs or flour and fry them until they are browned. Set the chops on top of the veggies. Cover casserole dish with foil and bake at 400 until the potatoes and carrots are soft... about 45 minutes You can also uncover it for the last few minutes of cooking.

35. Pork chops
work them over with a food hammer until they are about 1/4 inch thin and say: "nicht schiessen bitte!" season with salt and pepper dip in egg and then in a mixture of flour and bread crumbs. Pan fry and voila! Wiener Schnitzel.

and it was just yummy and 7 points for 1 3/4 cups although mine was probably a bit less because I only had one can of the beans, & it calls for 2

Will definitely make this one again

couscous with spinach and pine nuts, marinated chicken in pitas with hummus, feta cheese, kalamata olives, and fresh veggies. It's one of my favorite easy meals.

40. Leftover Seafood & Tomato Stew
Chunks of cod, sea scallops, plum tomatoes, celery, carrots, onions and a bit of garlic, ginger and jalapenos. Yesterday, we had it with cheddar/veggie ham muffins, but tonight I'm eating it with some baguette.

Tres yummo. We might make another batch this week.

42. My uber-awesome chicken fingers!
Hand-cut breast strips (double-coated) , with the baked-beans-of-wonder (Bush's 'country style', add brown sugar, catsup, dijon mustard, sliced hotdogs, and browned ground beef) and some green beans.

T'was yummylicious, and there are leftovers for lunch tomorrow!

43. Oven roasted veggies (sweet potatoes, zucchini, onion, garlic, asparagus, mushrooms
tomatoes and fresh herbs) plus turkey burgers with fresh avocado. The house smelled fantastic and the veggies got perfectly roasted with caramelized bits. YUM!
