spinach quiche with onions, mushrooms, sharp cheddar, and lots of feta! And baked sweet potatoes! Yum! :9

2. Curried bean soup
Started out with a pureed roasted vegetable broth, then added green onion, mushroom, spinach, celery and a 5 bean mix; spiced it with salt, pepper, curry, cayenne and parsley.

A salad, and a Wunderbar for dessert. :)

5. I ate a couple handfuls of salted peanuts earlier and have LOTS...
...of good leftovers packaged in the freezer-- penne with tuna and artichoke tapinade, Moroccan lamb stew with couscous, beef ragù alla bolognese, stuffed salmon, oh my. Problem is, I'm not really hungry so I'll probably not have anything more. Sigh.

9. "fend for yourself" dinner....
I had triscuits and cheese, John had a balance bar, the kiddo had cheese, crackers, and a banana, and we all snacked before bedtime. Some nights, especially when we don't get home 'til 7, that's as good as it's going to get...

13. Today's a holiday for some in CA, Cesar Chavez Day.
We had a leisurely lunch with friends...arugula salad, sandwiches on good baguettes, a little red wine, French pastries for dessert. Who needs dinner after that?

14. Corn Tortillas with Veggies inside
My new masterpiece, might as well share : )

4 organic yellow corn tortillas:
moisten up first by getting both sides wet and heating in covered pan in oven so they're pliable

INSIDE:
red organic onion, finely chopped
yellow pepper, finely chopped
red pepper, finely chopped
green pepper, extra, finely chopped

ON TOP THE VEGGIES:
extra sharp Tillamok white cheddar cheese, thin strips
red pepper flakes like you put on pizza -- several shakes, depending on your courage
Annies roasted red pepper dressing, drizzle about a tablespoon on each one

Fold all in half / halfway roll-up, drizzle a little water on top so they will steam-cook
Cover pan with tinfoil and stick it in 300 degree oven for around 15 minutes

OPTIONAL: melt some butter on top of them when you dump them on your plate.
Eat half at a time so your second helping's still hot : )

I could eat - these - ev - ery - day - til - i - die . . . .

I am learning for the first time to try to eat gluten free. Nobody else to cook for so if I want this for dinner Every Night Til The Cheese is Gone, it's okay~! Quicker to make than you think too!

over reheated rice, with sag paneer and korma sauce from the takeout Indian restaurant mixed together. Fresh green beans.

Asparagus, with butter and lemon juice......wow!

And a little rice......

It was so damn good......

Of course, I was starving!
