1. What kind of cheese?
I've got some cheese in the fridge that has been cut off a larger piece that is 3 months old and is totally edible. Parmesan, Gruyere, Comte.

Mozzarella - and pre shredded.

Science experiment time!

We've got a place here in Philly where you can buy fresh made Mozzerella. Claudio's in the Italian Market on Ninth Street. It is the best I've had outside of Italy. Milk from grass fed cows.

2. Usually hard cheese is good for longer
Especially if it is cheese that you are heating. Of course, discard it if is visibly moldy (although you can cut it off on larger blocks of cheese and eat it) or if it smells yeasty or barny or has some other disagreeable stench.
They just put that on the lable to cover themselves.

but it's goat mozzarella.

Don't know if that makes a difference...:shrug:
