Today at the Sonshine Soup Kitchen: Vegetarian Chicken Ala King

Mmmmmmmmmmm. I made it from scratch (well, except for the ersatz chicken)


We served five today, a little less than normal, but it's been raining like hell for a week now.


Homemade rolls and phoney butter flavored spread


Cooked to perfection on the new stove :)


Served by my lovely Mother in Law


And me

Eat up!

At the end of the meal, feel free to pounce on me for being an Atheist cooking in an Adventist soup kitchen. One of our patrons did today, and we had a wonderful hour long discussion about faith. Mrs. McLargehuge tells me there is an "undercover" preacher making the rounds of local soup kitchens.

I think we found him today.

4. why certainly!
ingredients -

long grain white rice (you can use brown, or wild too)
two tablespoons butter
olive oil
about 3 pounds of vegetarian chicken substitute
one medium sized onion
two tablespoons flour
two cloves of garlic
one fresh carrot
one can mixed vegetables
two cans cream style corn
one can chick peas
salt
pepper

Cook the rice (I made 3 cups of dry rice, because I was cooking for 5-15), but you can use less.

Heat butter in skillet/saute pan
add one tablespoon flour to make a rue
add phoney chicken and one can cream style corn
let simmer

Heat olive oil (about 3 tablespoons) in another skillet/sautepan
add chopped onions, garlic and thinly sliced carrots (I slice them lengthwise)
when onion are soft add mixed vegetables and chick peas
Stir over medium heat for about 10 minutes
add salt and pepper

When rice is done fill steam table pan with rice
mix in phoney chicken mixture
mix in saute'd vegetables

in saute pan, create olive oil rue
about two tablespoons of oilive oil and one tablespoon of flour
add second can of cream style corn and stir until it thickens into a nice cream sauce

mix with rice, chicken, and vegetable mixture.

Salt and pepper to taste.

When I volunteered at a soup kitchen in my hometown, there were hundreds.

10. the second sunday of the month
is my favorite day. I had them put me on the on-call list for every sunday too. But several of the others are reluctant to work in the church kitchen with a... GASP... atheist.

My Mother in Law sticks up for me though :)
