We had home made fresh herb Koresh for dinner tonight, prepared with dried Persian lemons.

It was excellent.

Make sure you have the lemons completely covered in the brine solution, and there should be plenty of undissolved salt in the bottom of the container. We usually weigh them down with a glass lemon reamer to keep them submerged.
