my brother is making dinner but can always use a good recipe!

1. Well, we call it dressing in the south and
we don't stuff it in the turkey! But I just made some last night and the recipe is fresh on my mind!!

2. My favorite is Oyster Dressing ...
Mom makes it every year. I found this recipe online:

1 cup butter
2 cups chopped celery
1 cup chopped sweet yellow onion
1 teaspoon leaf sage, crumbled
1 teaspoon thyme leaves
1 teaspoon salt
1 teaspoon fresh ground pepper
1 pint oysters, drained and chopped
1 cup chicken or turkey broth, more or less
2 medium eggs, beaten
1 pound loaf whole grain bread, cubed (2 days old)

Preheat oven to 325-degrees. Coat an 15 x 11 x 2-inch baking pan with cooking spray. Melt butter in a saucepan over medium heat. Sauté celery and onion till tender. Stir in broth, seasoning, eggs and oysters. Remove from heat. Place bread cubes in a large bowl. Pour oyster mixture over and mix to coat. Transfer mixture to the prepared baking pan. Cover with foil and bake for 2 hours. Remove foil the last 30 minutes of baking time for the surface to crisp.

4. Its a little late to do it right
You need to leave the bread sit out for a week to get stale. If you can find some unseasoned croutons that might work or dry the bread in a slightly warm oven.
Stale bread
cornbread
onion
celery
chicken broth
Butter
sage
parsley
S&P
Tear up the bread and coarsly crumble the cornbread.
lightly saute the celery and onion and mix with the bread.
moisten with chicken broth until you can ball the bread but it still has some spring to it.
Add sage, parsley, salt and pepper to taste.
Use less broth if putting in bird as it will get some moisture from the juices as it cooks.
I like to add some diced chestnuts and/or oysters but the rest of the family is against it.

browned Jimmy Dean sage sausage & fine chopped little smokie links :thumbsup: oh, he uses red onion instead

8. My brother....
learned a great recipe when he was in the Navy but he won't share it. It is very moist--I think he puts turkey gravy in it. Happy Thanksgiving--despite everything, we have a lot to be thankful for.
