I keep forgetting the extra lime. Shucks.

The quinine in the tonic keep malaria away too - I've certainly never suffered from malaria, so it must be true.

14. One hot southern summer...
I ate little besides chocolate chip ice cream and corn flakes with milk.

You get to feel kind of lightheaded, after a few weeks...

Haven't decided whether I want pasta again or Thai. So few Thai restaurants around here--I need to be closer to Boston.

13. I've learned to cook thai-my favorite is a beef salad. Water fall beef:
Grill rare-med rare a flank steak. Chop lots of garlic, red onion, cilantro, toast sesame seeds. Make a mixture of lime juice (4 limes), fish sauce (to taste), sugar (about 1 tblsp, toasted sesame oil (1 tblsp), and a touch of tamari (1 tsp), small thai hot red peppers (remove seeds and white inner membrane-I use about 7-12 depending on size),
slice grilled beef on diagonal for better texture-marinate a bit in the veggies and sauce. Oh Man it's good-serve on chopped romaine-tomatoes optional:9

12. If you have the money, hot days are what restaurants are for
Sit in the air conditioning, let the cooking be done by people who are paid to do it.

Otherwise, gazpacho or some other cold soup with a peanut butter sandwich on the side and ice cream for dessert sounds appealing. :-)

Oh, and homemade wine cooler (wine plus seltzer) or sangria. Those are very important. Or iced tea as an alternative.

I put a wee bit too much wine in - so it packed quite a punch on the tastebuds, pity the alcohol burns off.

24. I just use any vegetables to hand
Ones which are native to southern Europe tend to work best. I'm sure it's all utterly inauthentic.

Gently soften some onion (or similar, I used leeks this evening) in butter/oil, then add the rice coating it in the oil. Add some wine and leave it to soak in/evaporate, and add vegetable stock a little at a time. Add the various vegetables so that they have enough time to cook. Right at the end I stir in some parmesan, or it can be shaved over the top on the plate.

25. Garbanzo beans, maybe some black beans, tomatoes, cukes, feta cheese
dressed with oil/lemon juice, fresh garlic, dill fresh pepper, parsley and a bit of dried mint. Salt to taste.

28. Yeah, when it's hot, open some canned beans and rinse well in cool water
Salad is actually better the next day too, so make a bunch ;)

I also like to cook up several pounds of garbanzos when it is not hot and run them through the food processor with lemon juice, olive oil, salt, fresh garlic... make a mess of hummus. Season with fresh or dried peppers as you like. Experiment with different seasonings.

Put it in pint or half pint plastic dishes and freeze it. Pop them out when solid, wrap in plastic wrap or foil. Keeps well frozen. Take out and thaw as needed. Hummus is a GREAT hot weather fuel. Give energy without being too heavy. Get some akmak crackers and you are good to go. Good with fresh greens, tomatoes, great appetizer for when you have people over and fire up the grill.
