Didn't they used to post ridiculous gourmet dinner menus?

It's a pretty damned good recipe.

These happen to be rolled green chili chicken and avocado enchiladas.

Prepare a batch of homemade "nearly veggie" green chili.

I quickly fry white corn tortillas (don't want to fry? you can also steam, or dunk in the green chili).

place a bit of cooked, hand-pulled chicken breast meat, a couple of slices of avocado (you can make guacomole if you want, but I am a purist), some diced onion, a dollop of the chili and some grated jack cheese on a tortilla. Sprinkle the whole thing with a bit of powdered red chili and salt. Roll it up. Stuff it good, but not so full you can't roll it up and keep it rolled up on the plate. Repeat until you have as many enchiladas as you want to prepare. I usually eat three.

smother with green chili. Be sure to get the whole tortilla wet to keep from drying out when you heat it. Bake in oven (sometimes I cheat and use the micro) to melt the cheese.

Sprinkle a few more onions, perhaps some diced fresh chili or a couple slices of the avocado on top.

Of course the magic is in what kind of chili you use, how you prepare it and how you prepare the chicken . . . Plus, it's a theme. Use pork instead fo chicken, or no meat at all, or add some black olives or grilled red peppers, or whatever you like.

11. You're kidding right? About the two you did not mention?
I used to live in New Mexico and I love green chiles.

I've been on a Mexican food for the past two weeks because I was writing an article about the commercialization of Cinco de Mayo and it got me realizing that I really do miss certain things from the SW.

13. I figured that by your recipe
You had it down to perfection. What part are you from? I used to live in Deming and write for the Las Cruces Sun-News covering the border.

Now that I am in Miami, I have to buy the canned green chiles, which is better than no chiles at all. But I have friends who said they will send me some.

4. The last time I made enchiladas
the family made long faces. My husband said, "Can't we have burritos instead?"

Next time they pull a stunt like they I'm auctioning off their dinner on eBay.
