You have to do it right or it comes out tough and tastes gamey.

if you are going to take the time to do it right you have to do pork... I have a Boston Butt Fundraiser coming up and let me tell you there is nothing better then a Ton (yes we sold 2000 pounds of pork last October) of pork that has spent 13 hours on the grill, and a small dab of home made sauce...

But if you don't have the time go beef...

I do a LOT of smoking and nothing compares to pork for flavor retention and juiciness, the amount of fat any piece of meat has is the key to how it will cook. more fat=good - That said, I usually get brisket at a resturant because many places put to much fat in w/their pork when they serve it. fat-good for cooking,bad for eating.

13. Pork works best for small bites, like satays
Just make sure it is well moistened with marinade and kept close to the flame, brush it with more marinade to keep it from drying out while it gets crispy.

I agree about brisket too. The ONLY way it really tastes good, but if you use a beer mop and keep flipping it over indirect heat, it comes out great. Lot of cooking time, though. Two hours at least.

15. I've never tried
cooking brisket any other way except smoking. 15lb. brisket usually takes me about 10-11hrs. at 250 degrees. thes at least 2 hours resting time wrapped in foil and towels. Unbelievable flavor and tenderness.

16. What do you mean by BBQ? Do you mean "sauce" or "grilling"?
Some people erroneously use the term BBQ to mean "the act of grilling".

If you mean what meat is best when slathered in barbeque sauce, I think pork is the answer.

if you mean, what meat is best when grilled, then again, pork takes it (in general) but nothing beats a beef steak (specifically). yum!! But, if doing Asian style grilling, then chicken will come out mighty fine as well. Also yum!

If you mean grilled AND BBQ, then it's pork ribs. Plain and simple, no contest. YUMMY!!

See, that's why we get into trouble somtimes - we assume people are using a word the same way we are, when in fact, they aren't. I would never consider smoking meat to be "barbecuing". It's "smoking".

To barbecue means to put bbq sauce on it, whether you are grilling, baking, putting it in the crockpot, or making a pot of barbecue beef for sandwiches.

If you are smoking AND putting bbq sauce, then it's a smoked barbacue.

I bet it all depends on what region of the country you are from.

Trust me on this, BBQ means slow-cooked (admittedly, not actual smoking... mea culpa... got carried away there). If you look up the history of BBQ, there is no doubt that slow cooking is necessary to make BBQ.

27. I agree...
For plain grilling, nothing beats a butt steak, with just a dab of pepper, over charcoal. Beef sucks up the flavor fast; most other meats need more time to absorb the charcoal taste.
