when are you putting the turkey in the oven?

1. Turkey questions! Help!

First of all, I can't get that plastic thing that's holding the legs together off the turkey. Why do they do that? Second, how often should I baste the darn thing? Turkey experts, please respond.

3. I think you leave the plastic thing on

and just baste whenever you think of it. I put mine in the oven at 7:30.

It's going in the Holland Grill and we will eat around 4:00

4. Ours is in the oven...

A 23 pound bird for just the two of us, it ought to be ready around 1:30 or 2pm.
We're gonna can up the rest of it for quick meals the rest of the winter.
