10. Holiday mixed fruit relish
1 1/2 cup minced apple - somewhat tart type preferred
1 cup dried or fresh chopped cranberries
1/2 cup chopped rose hips
1 1/2 cup sugar
1 1/4 cup water

Using one (or two) oranges:
(Recommeded orange type - Seville, Blood, or in a pinch, Naval)
1/4 cup grated orange peel from your orange
1/4 cup fresh squeezed orange juice
Pulp of above orange - remove pips and membrane.

2 tablespoons cinnamon
1 tablespoon mace
2 teaspoons cardemon

Optional - after cooking, add 1/8 cup minced mint.

2 tablespoons pectin (to add a more jelly-like consistancy)

Place water and orange peel in pot, bring to and let simmer for 20 minutes
After 20 minutes, add cranberries, apples, juice and orange pulp. Cover and simmer for 10 more minutes.
Mix in sugar and spices, bring to a roiling boil, stirring regularly. After two minutes of boil, stir in the pectin and let boil for another minute.

Remove from heat. Skim any foam off the top.

If serving within two days, place in airtight container in the fridge. If canning or giving as part of a gift package, use proper canning techniques.

12. I love cranberries!
I will not touch that canned jellied stuff with a ten-foot fork.

I make my own spiced cranberry sauce with fresh cranberries, red zinfandel and a mix of allspice, cinnamon, cloves, and orange peel. I also make my own fresh cranberry orange relish.

This time of year often finds me making cranberry orange muffins or bread, cranberry drop cookies, and cranberry-white chip cookies.

We made it one year for a joke and really liked it so we just kept doing it. It sounds weird but it's really good. And pinker than Pepto Bismol!

Mama Stamberg's Cranberry Relish Recipe
2 cups raw cranberries
1 small onion
1/2 cup sugar
3/4 cup sour cream
2 tablespoons horseradish

Grind the cranberries and onion together. Add remaining ingredients and mix. Put in a plastic container and freeze. An hour before serving, move the container from the freezer to the refrigerator compartment to thaw. The relish will be thick, creamy, and shocking pink.

Makes 1 1/2 pints.

Edited to add: We actually have to have TWO types of cranberry every year. Because my father insists on paying hommage to his white trash roots by having the canned stuff. Furthermore, this must be brought to the table completely intact, in the actual shape of the can, with ridges and everything.

Of course, this is now a favorite running joke, and usually starts us telling every single grandparent story we have. :D

ALWAYS canned jelly, canned whole, cranberry relish (with oranges), Martha's cranberry jalapeno relish, and sometimes (when I feel like making it) cranberry chutney.

Now I am going to have to try yours, too. Thanks a lot. :D

But I don't really care for the sauce. HOWEVER, Mrs. Ironflange, when she feels like it, makes a fabulous jellied cranberry salad.
