They have buy one get one free on Ricotta Cheese and Mozzarella Cheese at the store and I bought both and now I have to make something to use them up. I am thinking about a Spinach Lasagna with a white sauce and tomatoes.

3. the ready to bake
lasagna noodles that you don't have to boil are a wonderful thing!!

Some pine nuts with your white sauce and spinach would be yummy.

4. Oooo toss some corn in there.. that would be good, and I think you
could manage corn with your chewing issues!

Corn is DELISH in lasagnas... even small bits of broccoli would be good too.

5. Last Week?
Raven posted a recipie for a Cheese and Tomato Pie a few days ago discussing Will Pitt's Food Coma.

I wish I could direct you to a good source, but I'm more of a consumer than a creator of good food.

6. It was Raven - Will Pitt's mother and if weren't on a sticking
diet, I would have already made it! I'm searching, but haven't found it yet.

11. Here's how I do it....
I cusinart the ricotta cheese with spinach noodles - basil - oregano - set aside

I use canned gravy which I enhance with garlic and cooked ground beef with onions - I add some paste mixed with water

I used the no-cook noodles the last time I made it

I layer it all with lots of provolone and mozerella cheese and bake it

Is this the end of my diet?

12. Hawaiian Lasagna
Aloha!

This is a variation you can use with your favorite lasagna recipe. If you do not have one, every box of noodles has one printed on the box.

When preparing the sauce, add one 8 oz. can of crushed pineapple, including the juice. Let the sauce boil down to desired consistency. If you use a prepared brand of spaghetti sauce, select one that is not sweet (don't use Prego, which I happen to like, but not for this recipe).

For the meat, use Italian sausage, as spicy as you can handle. This contrasts well with the sweetness of the pineapple. You can even go as far as adding pepperoni or SPAM (very hawaiian).

When through layering your lasagna, lay a slice of pineapple ring for every serving of lasagna you plan to serve, right on top of the lasagna. Most large cans of pineapple have seven or eight rings. Check the label. I serve 15 from a 9x11 dish, so 2 cans does it for me. I add the juice from this to the sauce also.

Bake in accordance to the directions of your particular recipe.
One thing I do differently is I don't bother to boil the noodles before the layering. The added moisture from the pineapple provides more than enough moisture when baking to make your noodles nice and tender. Just make sure the top layer of noodles are completely covered with toppings (sauce, cheese), an put the pineapple rings on last, and bake uncovered. If you are a lasagna purist, and you feel you must preboil the noodles, then make sure you boil down and reduce the sauce very thoroughly so that your dish won't be too soupy.

Mahalo!

16. This just in from Will Pitt;s mother
HI! I ended up posting two recipes on DU. I'll give you both.
"Poor Martha's Party Casserole"
I don't have exact amounts for this one, but play it by ear

Lasagna noodles. (Someone on DU suggested using the no boil kind which I tried. They are pretty good but a little tough).

Make a nice thick (but spreadable) mixture of:
Cottage cheese
Cream Cheese
Sour Cream
Chopped scallions
Chopped green olives
Garlic powder
Pepper

Make your favority tomato sauce.

Butter the bottom of the pan and lay down a layer of noodles. Spread
some of the mixture over that, layer with noodles again and keep alternating. End with a layer of noodles. Cover with sauce, them parm cheese, then thin sliced tomatoes, then more parm. cheese. Cover and bake in a slow oven. Let cool and refrigerate. Bake again before serving. This gets better as the flavors meld.

Tomato-Cheese Pie.

Buy or make two pie shells.

For the filling:
10 plum tomatoes peeled and sliced. (Peeling is easy if you drop the
tomatoes in bioling water for 20-30 seconds and then transfer to ice
water until they are cool)

1/4 cup of fresh chopped basil
3 chopped scallions
1 1/2 cups of shredded sharp sheddar cheese
1/3 cup of mayonaise
2 tablespoons of lemon juice
1/2 teaspoon kosher salt
dash of pepper

Lay down the first pie shell and fill with tomatoes, basil, scallion
mixture. Cover with half of the cheddar cheese.
Mix mayonaise, lemon juice, salt and pepper and spread over the tomato mixture.
Layer with the rest of the cheddar and cover with the second pie shell. Cut 3-4 slits and bake at 350 for 45-50 minutes. Let cool a little bit before you serve.

This is good cold but I froze some and when I heated it the pie shell was soggy.

ENJOY!
