i had fun with baking today

i had fun with baking today

this morning I made a Raisin-Spice coffee cake to go with yummy Market spice tea that I order from Pikes Street Market in Seattle

this recipe comes from the Betty Crocker cookbook circa 1978

2 cups all purpose flour
1 cup sugar
1/3 cup butter or margarine, softened
1 cup milk
3 tsp Baking Powder
1 tsp ground cinnamon
1/4 tsp allspice
1/4 tsp nutmeg
1 egg
1/2 raisins (I had some big golden raisins I used)


heat oven to 350. Grease square 9x9x2 pan. Beat all ingredients except raisins and streusel on low for 30 seconds, then medium for 2 minutes scraping occasionally. stir in raisins.

spread half the batter in pan, sprinkle with half the Struesel (recipe below). Top with remaining batter and sprinkle with remaining streusel. Bake 40-45 minutes or until toothpick comes out clean.

Streusel

1/3 cup firm butter or margarine
1/2 cup all purpose flour
1/3 cup packed brown sugar (or granulated sugar)
1 tsp cinnamon
1/2 cup chopped nuts (I had some walnuts)

Cut butter into flour, sugar and cinnamon until crumbly, stir in nuts.

it was Delish!

then since I had some Beef Stew thawing I wanted some fresh bread. I had picked up some bread flour while shopping Friday and wanted to test my bread machine (which gave me trouble last time). I found this on the web from "Master Cooks"

Faux Sourdough Bread

1 package Active dry yeast
2 1/2 cups bread flour (i had unbleached)
1 TBSP dark molasses
1 cup Sour Cream (at room temp)
1 tsp salt
1 tsp lemon juice
4 TBSP warm water

i put the ingredients into my bread maker in the order listed. She said set it for "white bread" but my machine died after the first mix. :( the dough was still a little sticky and not completely smooth..

so i took it out, kneaded it by hand about 4 more times, placed in an oiled bowl and let it rise. Punched it down and let it rise again then baked it at 350 for about 35-40 minutes. It was beautiful and light and came out great.

I think I've messed with doughs enough now to know what to look for when I use the dough hook on my new mixer.

tomorrow, Molasses Cookies and Lasagna :)

i have done some stuff on the first three categories

I made some oatmeal cherry nut cookies. Used some oatmeal flour for the white. They turned out so good I was afraid we'd be having cookies for supper.

Your tea sounds really good. And it also sounds like you might be in the market for a new breadmaker sooner than later. Glad your sourdough came out well!

6. Sounds like you are making great progress with your new mixer
AKA "The Beast".

I may try making that faux sourdough. Are you adding it to Demopedia?

7. i probably will get around to it. i used unbleached flour and the
loaf is light and golden brown through out
