1. That's a losing fight.
A coffee shop is a really stupid place to have a union drive. All the successful unions are in technical fields where, due to educational requirements or experience requirements, workers can't just be replaced easily by new hires. Anyone can fill a cup with coffee so this won't be successful over the long haul.
