9. It makes sense
because a large dishwashing facility devoted to that alone is going to be able to buy a lot of automated equipment to do the job quickly and cheaply. The restaurant is saved the necessity of installing a scaled down industrial conveyor type dishwasher. They also save a fortune in water and sewer bills, plus have a lot less to fish crap out of when it all clogs up from the cig filters from butts squashed into the mashed potatoes.

It's not just the labor, it's the equipment.

The minimum wage needs to be raised to a subsistence level and employers need to be fined for exploiting any worker with a below subsistence wage. When that happens, the preference for illegal labor will disappear.

I don't blame anyone for avoiding an establishment that exploits illegals, though. Until the laws are changed, that's all we can do.
