This forum has come at just the right time for me!

I've spent the last 18 months on a fasting diet (and lost 60 pounds.) After dieting practically my entire adult life (I'm 49,) it's time for me to learn to eat healthy food. Our children are grown and out of the house so cooking for two is another adjustment.

Anyway, I've already printed off a couple of great recipes and I can't wait to try them. Even though I'm very busy, I'm trying to cook a couple of meals a week and make enough for leftovers.

If anyone has any suggestions on how to incorporate more low-prep fruits and veggies into my diet, I'd sure appreciate it. I've been buying frozen and canned because I keep throwing fresh produce away that I never get around to using. Thanks!
