One of my fond memories is going to the peers and buying shrimp fresh from the boats; some still jumping around! When the shrimp are fresh, the flesh is not white but translucent, and the shells have the iridescent glow of butterflies.
Lived in Houston for 20, prior to that five in the Rio Grande Valley.
