8. The Home Court Advantage Has Shifted

as has the advantage of the panel. Japanese tastes are very, very different from American -- much milder and appreciative of flavors Americans may find repellent. I wouldn't expect any American panel to pick an outstanding Japanese chef over a good American one.

I do think the panel could have some better members. But the Japanese panel often had bimbo starlets and others who didn't know food all that well. The editor of Bon Appetit magazine seems like a logical choice.

it's cheaper than any of Jean-George's overpriced restaurants, and much better too, imho. Seriously one of the best restaurants I've ever been to. It's on Thompson St. just north of Houston.

But I'll keep it in mind. I've never been to any of Vongerichten's restaurants, either. Come to think of it, I've not gone to any of the fancy shmancy places, like Danielle's or Le Cirque, etc. Except the steakhouses. I've also done Tavern on the Green and the Russian Tea Room (wow, was that ever a good restaurant! Too bad it's gone), but other people were paying for those places.

I, like you, have found many other restaurants that are wonderfully good and much cheaper, and probably a lot more fun, than the big name places.

27. Iron Chef America does not work

Its a culture thing. Japanese society is a unique thing. You have an island of people crammed on top of each other. There is no room for social accidents. Chaos would be catastrophic. So the cutlure developed a stoicism of extrodirary proportions.

But human nature is not built for this sort of reserve. It needs an outlet. So entire niches of Japanese society became devoted to getting the others to vent. To let the steam out. Geisha, chefs, and other entertainers in Japan are the valves of their society.

Iron chef combines the formality and structure of Japanese mainstream with the pressure valve of their entertainment sector. Thus the formality has meaning to the people even though the Chairman is just an actor hamming it up.

Another vital factor is the nature of island diets. There is not a lot of land on an island to develop large herds of cattle and other sources of meat. Thus they turn to the sea and mixes of smaller portions of widely varied tastes. Due to this dietary limitation creativity becomes the necessity in creating flavors. You cannot rely on a slab of meat to provide the bulk of the meal. Instead you have to create a series of tastes and flavors that draw the participants through the meal.

Western cuisine by comparison relies on preparing singular entrees to particular flavors. The height of western cooking relies on singular flavors rather than a journey of flavors.

For these reason Iron Chef America has none of the style of Iron Chef Japan and only retains the egotism that drives much of American media these days.
