Cauliflower "French Fries" - low fat, healthy, easy. [View all]

Something I picked up from my dietician - a simple fake out that comes out remarkably like french fries, same satisfaction level IMHO, but very low in fat and calories.

All you need to do is cut a cauliflower into small florets, shake in a bag with about 1 T of olive or canola oil, and put on a non-stick baking sheet. Roast at 400 degrees for about 45 minutes to an hour, turning it a couple of times. Allow it to get quite brown, crisp on the outside.

Serve right away, as it does go limp after a while out of the oven.

Great with ketchup and a little salt.
