Advice needed: Normally, winter weather would have taken its toll, but...

I still have sage, rosemary, oregano, thyme and other herbs fairly green and fresh. Is it ok to still cut them and make use of what seems fresh? Do I assume it is winter and leave them alone as I normally would do under the snow?

Advice would be greatly appreciated.
