Advice needed: Normally, winter weather would have taken its toll, but...

I still have sage, rosemary, oregano, thyme and other herbs fairly green and fresh. Is it ok to still cut them and make use of what seems fresh? Do I assume it is winter and leave them alone as I normally would do under the snow?

Advice would be greatly appreciated.

I also did a lot of drying before winter came, and I still have plants that have not been frozen yet too.

I stop using my basil, but as long as other herbs grow, I continue to use them. Here in S. California, rosemary and sage are year-round.
