I made a mango salad last night that was so good, I'll make it again and again. It was so simple to make. There's enough for tonight, so that will be my salad.

A steak and a few sweet potato waffle fries.

Stir-fry broccoli with ginger and garlic.

p.s. I cleaned like a demon today in my kitchen. I used my steamer and steamed all my surfaces and appliances. It is so nice to have a sparkling, clean kitchen!

payday isn't until wednesday, so i'm working with what i have - boneless, skinless thighs, rice, salsa, black beans, cheese and corn tortillas. i'll poach and shred the chicken, mix everything up, layer it with the tortillas and pop it in the oven. dinner will be later, though, it'll be a few hours until it's cool enough to run the oven.

add garlic salt/powder, cayenne and chipotle when i slop it all together. i use fire roasted tomatoes or a can of rotel rather than salsa and add a can of corn if i have any on hand.

and kale with garlic and cumin, and tomato/pepper/cucumber salad. Freshly baked Not Neiman Marcus chocolate chip cookies.

diced ham, sliced potatoes, chopped onions and garlic.
Sauteed in butter with oregano, soy sauce, and hot Hungarian paprika.

The potatoes were with red bell peppers, sweet onions, yellow zucchini, mushrooms, diced green chilies, shredded Mexican 3 cheese blend, a little cream, black pepper. Cooked covered, long and slow. Run under the broiler with bread crumbs and butter topping to brown.

Left overs will make a Sunday brunch tomorrow with eggs and toast.
