(35,663 posts)I made a mango salad last night that was so good, I'll make it again and again. It was so simple to make. There's enough for tonight, so that will be my salad.
A steak and a few sweet potato waffle fries.
Stir-fry broccoli with ginger and garlic.

p.s. I cleaned like a demon today in my kitchen. I used my steamer and steamed all my surfaces and appliances. It is so nice to have a sparkling, clean kitchen!
I hope you don't live too far but I will be first on the list to show us how to clean kitchens and I'll be glad to pick you up. What's a steamer?

(24,146 posts)payday isn't until wednesday, so i'm working with what i have - boneless, skinless thighs, rice, salsa, black beans, cheese and corn tortillas. i'll poach and shred the chicken, mix everything up, layer it with the tortillas and pop it in the oven. dinner will be later, though, it'll be a few hours until it's cool enough to run the oven.

(24,146 posts)add garlic salt/powder, cayenne and chipotle when i slop it all together. i use fire roasted tomatoes or a can of rotel rather than salsa and add a can of corn if i have any on hand.

Left overs will make a Sunday brunch tomorrow with eggs and toast.
