What's for Dinner, Thurs., Jan. 29, 2015

Beef vegetable soup with tortellinis, spinach, onion, rutabaga, carrots, celery, garlic. I like to make it with roasted tomatoes, so I have those going in a slow oven all afternoon. Lots of thyme. And beef, of course!

I made this about two weeks ago and it was so good, I'm making it again.

There is a place in this little town that does only one thing - rib eye tacos. You can get them on corn or flour tortillas. You can get them with or without cheese. You can get them con todo or just with some of the toppings.

Fish? NO! Pork? NO! Chicken? NO! Beans? NO!

And they are the best ever.

Actually they do one other thing, dynamite fresh flan!

But otherwise...

Rib eye tacos, that's a different situation. I usually get them simple on corn tortillas. Have fun!

I think the key is getting it the same day it is made. Otherwise, it gets that rubbery crust on it.

I'm a harina girl myself con todo!

Do you roast any of the other veggies before putting together the soup? Some seem good candidates for a pre-soup roast.

So I put the rutabaga, carrots, parsnip, and turnip in with the tomatoes to roast!

7. 30 minute pressure cooker chicken with chickpeas, tomatoes and chorizo

http://www.seriouseats.com/recipes/2015/01/30-minute-pressure-cooker-chicken-chickpeas-tomatoes-chorizo-recipe.html

While browsing this new site I discovered, wife comes by and says "I have a whole chicken that needs to be used up."

I think I'll dig out the pressure cooker, just for fun.

I'm at home for a while dealing with a medical issue, so I have way too much time. Been playing in the kitchen to keep occupied.

When we go to the store for a few ingredients, I'll pick up some malt syrup; I've been wanting to play with sponge method bread dough for a while. The last time turned out really good, but I want to do a formula from the textbook I used in baking class. I'll report on outcome and method when finished.

Happy eating.

in lemon water. That's all I can think up right now, but the tummy is acting weird today - so I'm going "mild" on the foodstuffs.

....made with green tomatoes from the freezer. Summer bounty. Some grated sharp cheddar, some diced sweet onion and roasted pepper on top. Oven fries and a carrot salad.
