I'm in NM, so I'd probably tweak it by using unsalted beef broth and chile powder (ground chiles, not supermarket chili powder) rather than the granules and all that tomato, giving it a jolt of lemon juice at the end for the acid.

This one also looks promising and I might even try it, although I'd use stock instead of granules:

Properly cooked cabbage doesn't smell like farts and tastes glorious, getting sweet as the bitterness cooks out. Now I'm hungry for cabbage soup. Maybe next week if it gets any cooler.

Add cabbage and the ham to simmer till it's all done. (Irish boiled dinner).

Or, do a cabbage, onion, mushroom soup, Asian style. It's a great base for dishes. And you can make it spicy, sweet 'n hot or mild.

Named for Vice President Hubert Humphrey. There are many variations to it, but this is the original:

I put in A LOT more than a cup of cabbage - I use at least a small head, more if I feel like I want to.

My family has been making and serving this soup for years. Many times it was Christmas Eve dinner. Great with some good bread or crackers and butter (my personal fave .

I found this one while searching - it sounds easy and uses a whole head: http://allrecipes.com/recipe/sweet-russian-cabbage-soup/

I found this one on another forum I use and I have wanted to try it:

Russian Soup
Brown beef stew meat
After meat is browned, pour in 8 cups of water, and add 1 can tomato soup, 4 diced potatoes, baby carrots cut up, and one onion and bring to a boil. (You can of course add whatever other vegetables you would like) After it comes to a boil, add 4 cups of cut up cabbage (to act as noodles) once that has fully cooked, add 1 cup of Western Salad Dressing. Stir, and serve!!! Very simple, and awesome flavor...a basically sweet and sour type vegetable soup.

Hope these are helpful to you, I love cabbage in soup. Getting to be that time of year again!

on a farm we ate very basic meals.

One of our favorites is one my grandma made during the very lean years. Brown some bacon, add water along with potatoes and cabbage and simmer until done.

Sure wasn't fancy, we didn't eat in bowls but on plates smothered in butter and salt/pepper.

I still crave it.

That's what I was thinking too, especially with some fresh dill and sour cream on top.
